Success Story: A European Brewery’s Sustainable Transformation with Unmalted Barley
A brewery in Europe wanted to embrace sustainability without sacrificing efficiency. The focus was first on their main brand, of which they produced 650,000 hL per year at their facility.
IFF’s latest life cycle assessment and analysis found that by using 40% unmalted barley and 60% malted barley, with the addition of the necessary exogenous enzymes, the brewery could achieve approximately 10% reductions in kg CO2equivalents, 21% in land use, 3% in energy and 17% in water footprint.
